F.L.E.B. Waffles - Peanut Butter Waffles

Ingredients

4 oz AP Flour

4 oz Peanut Flour (also labeled as Peanut Butter Powder)

2 Tsp Baking Powder

1 Tsp Kosher Salt

4 oz Pure Maple Syrup

12 oz Almond Milk (or cashew, or even better, peanut milk)

3 Eggs

2 ½ oz Peanut Butter

½ Cup chopped peanuts (optional for chunky peanut butter lovers)


Preparation

Microwave the peanut butter for 30 seconds & set aside to cool.  

In a large bowl combine the two flours, baking powder & salt.

In a separate bowl, thoroughly beat the eggs and mix in the maple syrup & milk.  Pour the mixture into the dry ingredients.  Add the peanut butter and mix for 10 seconds, add the chopped goobers and mix for another 5 seconds.  Set aside for the flours to hydrate for five minutes.

Heat your waffle iron according to manufacturer’s instructions and grease with cooking spray.  Cook until you smell peanuts and the waffle is toasty before moving to a sheet pan lined with a cooling rack.

Top with homemade jam or berry sauce; maybe more peanut butter if you’re feeling a little nutty
