Ingredients
4 oz Whole Wheat Flour
4 oz Walnuts (Plus more for serving)
2 Tsp Baking Soda
3 Eggs
16 oz Buttermilk
2 oz Butter, Melted and cooled
1.5 oz Blue Cheese, crumbled (Plus more for serving)
1.5 oz Pear-ginger preserves
1/2 Tsp Kosher Salt
Preparation
Pulse the walnuts in a food processor in short bursts until it reaches a coarse sand consistency.
Add the flour, baking soda and salt. Pulse until everything is uniform and transfer to a mixing bowl.
In a separate container whisk the eggs, buttermilk and butter and pour into the flour mixture.
Mix thoroughly for 15 seconds then allow to rest for five minutes.
Gently fold in the preserves and blue cheese before dishing into a heated waffle iron. Cool per manufacturer’s directions until waffles are toasty and fragrant.
Serve with more blue cheese and walnuts.
Pears -I mean pairs- well with greens tossed with lemon juice and olive oil.
