Turkey Gravy

Ingredients

Strained Drippings From Roast Turkey*

2 Tbs Reserved Fat From Turkey

4-5 Sage Leaves

2-3 Sprigs of Thyme

1 Sprig Rosemary

1 qt Turkey Stock

1 oz Cornstarch


Preparation

First measure out your reserved drippings and add enough turkey stock to get 1 full quart (You can use more but you will need to adjust the ratio of cornstarch, see Knowledge Index for more).

Add the reserved fat to a sauce-pan set to medium heat and add the sage, thyme and rosemary.

Lightly fry the herbs for 1-2 minutes until fragrant and the sage begins to brown along the edges.

Add your Stock and drippings to the pan and increase the heat to medium-high to bring it all to a simmer.

Allow it to simmer for 2-3 minutes before extracting and discarding the herbs with tongs or a slotted spoon.

In a sealable container add the cornstarch and about 2 oz of water and shake to combine before immediately pouring into the simmering stock while whisking.

Continue whisking until the gravy has thickened then adjust the seasoning to taste.
